For starters:
RECIPE FOR NAKED RAVIOLI (aka spinach & ricotta gnocchi) Serves 1-2 people

I lovvee these and their fairly easy to make! They definitely saved me a few times when I was sick of eating pasta.
2 cups frozen spinach, sauteed in nothing to dry it out
1 cup of ricotta cheese, drained
1 egg
1/2 cup grated parmesan
1/4 cup flour
1/2 tsp. nutmeg
salt & pepper
your favorite tomato based pasta sauce
mix all these ingredients together, minus the pasta sauce. only add flour until the dough you've made is dry enough to stick together but not too dry! add salt & paper to taste. make teaspoon size balls of dough and set them aside on some wax paper, cool for an hour in the fridge if you have time. if not they'll be fine but they stay together better if chilled. boil all at once until the gnocchi float, serve immediately with warm tomato sauce on top. yummm
